The hunger and thirst definitely point to the need to check for Cushing's disease and perhaps also hypothyroidism since she's gaining weight - she at least does not seem to be on too little insulin....

I would explore the option of a better veterinarian. Having one you don't trust makes everything difficult!

However, lots of vets still aren't great with diabetes. So you have to do some research...

To the degree that her problems standing BG and walking are due to diabetic neuropathy, there is a good chance that she will notice when her blood sugar has been controlled for a while.
